Talisker x Parley "Wilder Seas" is the very first Talisker single malt scotch whisky finished in French Oak XO Cognac casks. It has a pleasurable weight on the palate and a fine depth of taste, delivering a highly successful marriage of cask and spirit character - mature and rounded. The new 100% recycled bottle is made from biofuel and has been re-shaped into the distinctive Talisker bottle. This Limited Edition is vision and mission combined, as the in-built donation supports global, sustainable projects to protect and preserve sea forests off the coast of Scotland, South Africa and Chile.
Recently, Talisker made a partnership with Parley, a company that is dedicated to preserving the ocean's kelp and other environmental causes. To celebrate that partnership, and to raise funds for the ocean, a new, beautiful looking expression has arrived, the Talisker Parley "Wilder Seas". Even the bottle is made of 100% recycled glass from biofuel, and it is matured in ex Cognac casks. To make it even better, it comes at 48.6%abv. On the nose, this is incredible. Salted chocolate, salted caramel. Aromatic smoke. After a couple of sips, the aroma changed into coffee with milk. Honey. On the palate, it is marvelous. Coffee, toffee. The salt rose for a moment, only to then become a pepper bomb.The after taste is smokey, peppery. Ginger and toffee. Very straightforward but amazing.
Overall, the Cognac Casks have given this dram a bitter chocolate / coffee / cocoa profile which I find very interesting since those are not usual notes you can find on a Talisker. A wonderful single malt, my score for it is 95 over 100.

The Talisker distillery is in the Highlands region and owned by whisky industry giant’s Diageo. The distillery is located on the beautiful Isle of Skye and has a lengthy, thriving history of production dating back to 1830 when founded by Hugh & Kenneth MacAskill. Over the past twenty years Talisker has increasing become one of the main single malt whisky brands worldwide. Currently sales stand at 3.2 million bottles annually and it holds eighth place on the best selling Scottish single malt list. Recently the owners took the decision to completely overhaul the visitor centre to encourage a higher percentage of the 650,000 annual tourists to the island to visit the distillery. Talisker has won many prestigious awards. Most notably the Talisker 10 year old took ‘Best Islands Single Malt’ at the 2017 World Whiskies Awards and was a gold medal winner at the San Francisco World Spirit Competition 2017. The style of whisky is enjoyed for its full-bodied, smoky and maritime character. The core range is Skye and Storm with no age statement. Distiller's Edition 10, 18, 25 and 30 years old in Amoroso sherry finish casks. Plus theres the Port Ruighe finished in ruby port casks. In 2022 the 44 year old Forests of the Deep was released unusually finished in casks that were charred using sea kelp.

Official Tasting Notes
APPEARANCE - A glorious, shining deep amber with reddish lights. The rich colour of rosewood or a freshly opened horse chestnut.
BODY - Medium to full.
NOSE - Mild and dry in feel, yet rich overall. Tight-packed top notes of fruit and malt suggest malt bread with sultanas, dates and dried figs. Beneath them, a light mineral hint of chalk leads into rousing maritime notes of brine, salt crystals and ship’s rails in a high sea, all on a lightly fruity, winey base, with a hint of pipe tobacco. Adding a little water brings up a smoky note.
PALATE - The creamy-smooth mouthfeel introduces a big taste that starts richly sweet then quickly becomes salty, smoky and fruity, with lush, sweet hints of sultana and fig mid-palate wrapped in rising peppery spice and smokiness. Rich and intense at natural strength, it becomes slightly sweeter, fruitier (suggesting ripe figs again) and spicier if water is added.
FINISH - Long, warming and lightly drying, with a familiar late peppery catch and a most appealing smoky-fruity aftertaste.
